madatha chapatti

Madatha chapatti:


I don’t know English name of this madatha chapatti……..it is not regular chapatti and not even roti…..



Ingredients:

Atta : 2 cups.

Salt : ¼ tspn.

Milk : ¼ or ½ cup.

Ghee : ½ tspn.










Preparation:

Take one bowl, add salt and ghee to the milk and stir till the salt is dissolved.

Mix the flour in it.

Go slow with the water---Add it as you go along and only as you need.

Mix together by hand and kneed till a smooth dough is formed.

The finished dough must be smooth, after it is done, Add oil at this stage [it is optional].put a side for 10-15 mins to rest.


Now divide the dough into equal portions.

Take one ball in your hands and press the ball with your palms applying gentle pressure, till it forms a smooth without cracks.

Do this for all the portions.

Lightly coat one ball in dry flour -->doing this will prevent ball from sticking to the rolling surface.

Flatter the ball of dough -->to get it ready to roll .


Roll with circular motions --> till you have a circle.


Apply the oil/ghee on chapatti. Fold half  of the chapatti. And apply the oil and fold it again.

Lightly coat with dry flour on both sides of our rolling chapatti.

Rolled out chapatti. It must not be thin


Start cooking chapatti --> heat the pan on medium flame and put the rolled out chapatti on it to cook.

Cook till bubbles begin appear on the upper surface.

Apply the ½ tspn of oil.

Now flip the chapatti and cook other side till pale brown spots(raised bumps) begin t apper it.

Flip it several times and allow the next side to develop these pale brown spots.




Then….,

My madatha chapattis are ready to eat.

Bendakaya Pulusu

Bendakaya/Ladies Finger/Vendakkaya Pulusu:

Ingredients:


bendakayalu: 1/2 kg
tomatos: 2(optional)
tamarind pulp: lemon size
onions: 2
chillies: 3
red chilli powder: 1 tsp
turmaric powder: a pinch
salt
jaggery: 1 tbsp(or sugar)
coriander leaves
daniya powder

For Popu:

oil: 2 tsp
red chillis: 2
mustard seeds: 1/4 tsp
cumin seeds 1/4 tsp
urud dal: 1/2tsp
chann dal: 1/2 tsp
crushed garlic flakes: 5
fenugreek seeds: 1/4 tsp (optional)(menthulu)
curry leaves

Preparation:

Heat oil in a pan and add mustard seeds, cumin seeds, urud dal, chana dal, red chilli pcs, curry leaves and crushed garlic flakes and fry till dals turns light brownish.

add choped onions, choped chillies and fry for 5 mts with low flame.


add choped bendakaya and tomato and mix well and cook covered for 10 mts and stir occasionally.




add turmaric powder, salt, and chiili powder.

soak tamarind and make one glass of tamarind juice and add it to curry.


add jaggery and cook with low flame for 15 mts until sauce thickens and remove from fire.
add daniya powder and add coriander leaves.
Then yummy bendakaya pulusu is ready to eat.
serve with hot rice.

Pachipulusu/Raw Rasam:

Today I am going to introduce you is raw rasam/ pachipulusu. This is very famous on Deccan region( Andhra Pradesh, tamilnadu and Karnataka) .My grand ma and my mother prepares this one especially on summer days. It is very simple and healthy dish. Preparation is  so simpleand quick.


Ingredients:

Green chilies : 3nos.

Curry leaves

Coriander leaves

Tamarind

Zeera/cumin seeds

Mustard seeds

Preparation:

Cut the onions into small pieces. Put tamarind in one bowl. Pour the water on tamarind. Let it for 15 mins.

The main flavor of this dish is on green chilies only. For this we can roasted green chilies, We put the green chilies directly on the flame. Then half of the chilly will turns in to black and half of the chilly will remain green/raw. Off the flame and cool it. And take one bowl add onions in it. Take roasted chilies in u r hand add 1 tspn of salt, Crush it /squeeze it add it to onions ,after crushing green chilies with salt …crush it with onions for few seconds .add tamarind juice in it and if required add some water and salt , to this add pinch of sugar. Check the taste once. Add coriander leaves.

Next, we do tempering. For this add 1tspn of oil on pan add pinch of mustered and cumin seeds, pinch of turmeric. Switch off the flame add curry leaves. Add this temper in to rasam

Our pachipulusu is ready to eat with rice.This is very good combination with muddapappu, and  stir-fries also






Todays Tip:

Whenever we cut and crush the green chilies, Apply little bit of oil on to u r hands. Then we can avoid the burn from green chilies. Wash your hands after crush the green chilies.

Natural tablet for reliefs cold

Hello friends.....


To day…… I post one milk item...It’s not just milk. It relives the throat pain /we feel relief when we suffer for cough and cold. My mother-in -law gives me when i suffer for sevear cold. Really its good try this.



Just u want


1 cup milk


½ tspn. meriyala podi/ pepper powder.


1/2 tspn. sonti podi / dried ginger powder.


1 tspn. of sugar.



Preparation:














Take one glass of hot milk in a bowl.

Add all ingredients to milk.

Boil it for few mins r 5 mins.

Filter and drink when it is hot.

kichidi

Kichidi / Pabbiyam:


Hello friends, to day, I post the item is kichidi. In my village this item calling as pabbiyam,

My grandmother prepares this one very taste without using any special ingredients.

She use Only green chili, onions and curry leaves, little bit of ginger garlic paste that’s it.

very yummy item Is ready. My family ready to it eat  whenever the item is hot.














INGREDIENTS:

Rice : 2 Glasses

Tur dhal/ kandipappu : ½ glass

Green Chilly : 6 nos.

Onion : 1 Big One

Mustard seeds : 1 tspn

Zeera/cumin seeds : 1tspn

Ginger Garlic paste : 1 tspn.

Dry redchillies : 2 nos.

Curry leaves

Oil : 4 tspns.

Tamato : 1 Big one.

Alu : 1no.

Carrot : 1no.

Water : 5 glasses.


PREPARATION:
First mix the rice and tur dhal, soak the rice. Cut the vegetables onion and mirchi. Put the bowl in stove. Pour oil to bowl. Add mustard seeds and cumin seeds. After 1 min add greenchillies fry it for 2 mins add onions .add curry leaves whenever onions turn to brown color, add all cut vegetables.fry it for 5 mins.

Add water .and add 1 ½ tspn salt. add rice and dhal. cook for 15 to 20 mins in medium flame. The taste and yummy kichidi is ready to eat. This is very taste when it is hot with some ghee.some one add mango pickle also.

Warm Water With Lemon and Honey

  I thougt which item is placed first  in my blog.......
more receipes come in my mind....to place first ....
      My day starts with this drink only...since 4 years....
in my college days this drink my regular food ......

So i want to introduce it  first....

Ingredients:   (for 2 persons)

lemon               -      1no.
Honey              -      4 tspns.
warm water     -      2 glasses.

preparation:
    first take 2 glasses of  water in one bowl..place it on stove..warm 2 mins..
and keep a side.. add honey and lemon water in it..combine with spoon ....filter it and take it....

   Its so simple and i think lot of people know this....
but dont add the honey in water when bowl is on flame..













Lemon:

lemon fruit color range from greenish yellow to bright yellow.lemon is vitamin C rich  citrus fruit.

Honey     

Honey is very valuable and extremely biologically active natural food product.It mostly consists of glucose and the wide complex of vitamins...also

It reduce gastric trouble also
