Carrot rice




Ingredients:-

2 cups      -      Rice(cooked)
4 no.         -     Carrot(grated)
1 no.         -     Onion
4 no.          -     Green chilies
4 no.           -    Cloves
4 no.           -    Peppercorns
1 small         -     Bay leaf
1 no.            -     whole dry red chili
2 tsp            -     Red chilli powder
1/2 tsp          -    Turmeric powder
1 tsp             -    Mustard seeds
2 tspn           -    Chana dal
4 tspn           -    Groundnuts.
salt as per taste
2 tspn           -     Ghee.  
1 tspn.          -    Jeera      
How to Prepare:-
  • Heat ghee in a pan.Add  tempering ingredients.fry it 1 min.Add green chilies, dry red chili,cloves,peppercorns,bay leaf .
  • Add in onion and groundnuts saute till they turn translucent.Add the grated carrots,red chili powder,coriander and turmeric powder and again saute till it gets cooked.
  •  Mix the cooked rice(use long grain basmati) in it.
  • Serve with plain curd or carrot raita
  • here i am using green peas too.
